The Sweet Pea & Poppy Cookie Co. Royal Iced Sugar Cookie Process
1. Mixing the Dough:
It all starts with the perfect sugar cookie dough. We blend high-quality butter, sugar, eggs, vanilla and almond to create a soft, flavorful base. Flour and a pinch of salt are added to achieve the perfect texture—soft enough to melt in your mouth, but firm enough to hold its shape.
2. Rolling and Cutting:
Once the dough is mixed, I roll it out to the ideal thickness, ensuring every cookie has the perfect bite. Using an array of cookie cutters, we carefully cut out shapes, from classic circles to intricate designs, all ready to be transformed into edible art.
3. Baking to Perfection:
The cut-out cookies are placed on baking sheets and baked until they’re just right—golden at the edges but still soft in the center. This delicate balance ensures they’re not only beautiful but also delicious.
4. Preparing the Royal Icing:
My signature royal icing is whipped up with the finest ingredients to ensure the icing dries to a smooth, glossy finish. I mix and color the icing to achieve the perfect palette for each design, from vibrant hues to delicate pastels.
5. Decorating with Precision:
Here’s where the magic happens! Using filled piping bags I carefully outline each cookie. Once the outline sets, I flood the interior with icing, creating a smooth, even surface. For more intricate designs, the flood layer is left to dry before I layer on additional details—like ruffles, lettering, transfers and florals—using different icing consistencies and techniques.
6. Drying and Finishing Touches:
After decorating, the cookies are left to dry until the icing is fully set. This can take several hours to ensure the icing hardens completely, making them both sturdy and easy to handle. Once dry, I may add any final touches, like edible glitter or hand-painted accents, for that extra special touch.
7. Packaging with Care:
Each cookie is then carefully packaged in an airtight bag to preserve its freshness. We love to display them in charming window boxes, making them perfect for gifting or enjoying yourself!

All sugar cookies are vanilla flavored with a vanilla almond flavored royal icing. Cookies are made in a licensed residential kitchen, which processes common food allergens, including tree nuts, peanuts, wheat, dairy, eggs, shell fish, fish and soy.
